  1. Wash your parsley really well in a large mixing bowl or a clean sink, changing the water two to three times.

  2. Hold the bunch from the leaves and cut off the stems on the chopping board in one swift motion. With a firm grip on the bunch of leaves begin by chopping them firmly in a straight line almost trying to achieve long narrow strips.

  5. The measurements for the perfect tabbouleh dressing are usually equal parts lemon juice to extra virgin olive oil added intuitively and to taste. One person is the designated pourer, usually one of my daughters, and I do the mixing. Wash your hands well, season with salt, pour the extra virgin olive oil and lemon juice onto the salad and begin to mix the ingredients with your hands, before tasting with a spoon, it should have a punchy lemon flavour and adjust the lemon and oil until you are satisfied and the flavours are well balanced.   6. To serve, lay the lettuce cups around a platter with a rim and mount the tabbouleh into the centre. Finally, zest the lemon on top of the tabbouleh.

  7. Tabbouleh should be scooped into a lettuce cup and eaten in large mouthfuls with the dressing dripping down your wrist.
