Quick Pickled Red Onions
  1. Thinly slice the red onion.

  2. THIS IS OPTIONAL: Place the onions in a bowl and carefully pour boiling water over them. Let stand for 1 minute, then drain well. - Don't do this if you like the crunch and flavor of RED ONIONS already.

  3. In a pint jar, stir together the apple cider vinegar, water, honey (or sugar), and sea salt until dissolved.

  4. Add the onions, peppercorns, and any optional seasonings.

  5. Press the onions below the brine.

  6. Refrigerate for at least 30 minutes before serving. They're even better after several hours.
