In a medium bowl, cream the butter and sugar.
Add the egg, ricotta cheese, and vanilla extract; mix until well combined.
Add in the flour, baking powder, and baking soda. Mix well.
Scoop dough onto parchment lined baking sheet.
Bake at 350 for 8-10 minutes or until lightly browned.
Allow cookies to cool on the baking sheet.
Mix glaze ingredients together and dip cookies and top with sprinkles.
