Add drained and rinsed can of chickpeas to a bowl
Chop cauliflower and cook down with a little bit of olive oil until soft
Mix in ½ cup of your favorite hot sauce and a little bit of maple syrup
Add lime juice to taste
Mash the mixture with a potato masher to desired consistency
Spray tortillas with oil and set them on a sheet pan
Fold tortillas and place another sheet pan on top to keep them folded
Bake in oven at 400°F for around 10 minutes
Remove from oven and fill tacos with the chickpea and cauliflower mixture
Top with ranch dressing and serve
