Chickpea And Cauliflower Fiber-packed Tacos
  1. Add drained and rinsed can of chickpeas to a bowl

  2. Chop cauliflower and cook down with a little bit of olive oil until soft

  3. Mix in ½ cup of your favorite hot sauce and a little bit of maple syrup

  4. Add lime juice to taste

  5. Mash the mixture with a potato masher to desired consistency

  6. Spray tortillas with oil and set them on a sheet pan

  7. Fold tortillas and place another sheet pan on top to keep them folded

  8. Bake in oven at 400°F for around 10 minutes

  9. Remove from oven and fill tacos with the chickpea and cauliflower mixture

  10. Top with ranch dressing and serve
