For the twist version: muddle mint leaves lightly in a wine glass
Add ¾ oz elderflower liqueur, ½ oz lemon juice, and 1 oz grapefruit juice
Fill glass with ice
Add roughly 3 oz prosecco
Top the rest of the glass with club soda
Stir well
Top glass with a bit more ice
Garnish with grapefruit and mint
For the tonic version: muddle mint leaves lightly in a wine glass
Add ¾ oz elderflower tea simple syrup, ½ oz lemon juice, and 1 oz grapefruit juice
Fill glass with ice
Add roughly 3 oz tonic water
Top the rest of the glass with club soda
Stir well
Top glass with a bit more ice
Garnish with grapefruit and mint
For elderflower tea simple syrup: add equal parts sugar and water to a small pot
Add 1-3 elderflower tea bags
Let simmer over low heat for about 5 minutes
Stir occasionally until sugar dissolves
Remove from heat and let fully cool
Remove tea bags and store in sealed bottle in fridge
