Ruhama's Fluffy And Delicious Egg Salad
  1. On a pan on low-medium heat, pour the olive oil, add the diced onion, salt and pepper.

  2. Stir it all and let the onion fry for 2 minutes without stirring. The onion should become clear and yellow.

  3. Fry it for 5 more minutes. Stir occasionally until the onion becomes caramelized and brown.

  4. Using a POTATO RICER, shred the boiled eggs on a nice bowl. The shredded eggs will be so fluffy!

  5. Season the eggs with chopped dill, salt, black pepper, mustard, mayonnaise and lemon juice.

  6. Add the caramelized onion with its oil.

  7. Mix it all well gently.

  8. Garnish with chopped dill and sumac.
