Chipotle's Barbacoa
  1. Cut chuck roast in 2 inch chunks. Season with salt $ pepper. Sear on high heat.

  2. Place all other ingredients in the blender except bay leaf. Blend till smooth.

  3. Place all beef back in pressure cooker along with the sauce and 1-2 cups of beef broth (enough to almost cover the meat). Pressure cook on medium high for 45 min or slow cook for 3-4 hours. Shred beef, add broth back to the meat.

  4. For the cilantro lime rice: Cook the rice in the water. Add the avocado oil, lime juice, lemon juice, and salt.

  5. For the fajita veggies: Sauté the bell peppers and onion with the oregano and salt.
