Ziresh Pilau
  1. Put all the ingredients in a dish and cover with water.

  2. Let it simmer on the stove (with NO lid) for about 90 minutes or until you have about 1 cup worth of liquid left in the pan and the chicken is falling off the bone.

  3. To make the ziresh (barberries), wash ½ a cup of barberries under cold water.

  4. Add this to a pan with one teaspoon of ghee, one tablespoon of honey and a pinch of saffron thread.

  5. Leave it to simmer for a few minutes until all the liquid has been absorbed.

  6. Serve with rice.
