Whisk the eggs, milk, salt and pepper in a large jug.
Let it rest for 15 minutes
Add the plain flour. For best results, let the batter rest for at least 30 minutes, or even longer in the fridge as this shocks them into rising in the oven.
Preheat your oven to 230°C (210°C fan). Add a little oil to each hole of your muffin tin and heat for 10-15 minutes until it's smoking hot.
Carefully pour the batter into the hot oil. It should sizzle immediately.
Bake for 20-25 minutes until puffed and golden brown. Do not open the oven door! This is the most crucial step for the perfect rise.
