Sauté the yellow onions, jalapeños, green bell pepper, and red bell pepper with a sprinkle of salt.
Remove the vegetables from the heat.
In a hot pan, add the thinly sliced beef and season with salt, black pepper, and garlic powder.
Add the sautéed vegetables back to the pan with the beef.
Add a splash of soy sauce (optional).
Cut the beef and add it to a pan.
Heat a tortilla on both sides.
Add mozzarella and provolone cheese to the tortilla.
Add the Philly cheese steak beef and vegetables.
Toast the quesadilla until it's nice and crunchy.
Serve with a chipotle mayo.
