English Muffins
  1. Combine all the ingredients, mix into a dough, then knead for a few minutes until smooth

  2. Cover and leave until doubled in size (about an hour)

  3. Roll out dough until about ½ inch thick, then cut out circles from the dough with a 3 inch cookie cutter

  4. Place each dough circle on a baking tray dusted with polenta and sprinkle more on top

  5. Cover and let rise for an hour

  6. Preheat a cast iron pan on a medium low heat

  7. Cook the muffins in the dry pan for 7 minutes (don’t move them while cooking)

  8. Turn over and cook for 6 minutes on the other side
