Combine all the ingredients, mix into a dough, then knead for a few minutes until smooth
Cover and leave until doubled in size (about an hour)
Roll out dough until about ½ inch thick, then cut out circles from the dough with a 3 inch cookie cutter
Place each dough circle on a baking tray dusted with polenta and sprinkle more on top
Cover and let rise for an hour
Preheat a cast iron pan on a medium low heat
Cook the muffins in the dry pan for 7 minutes (don’t move them while cooking)
Turn over and cook for 6 minutes on the other side
