Smashed Potato Protein Egg Bites
  1. Prepare the potato base by seasoning 12 mini round potatoes with salt, pepper, garlic powder, and paprika

  2. Spray potatoes with oil and roast or cook until softened

  3. Smash the cooked potatoes and divide them among a 12-cup muffin tin

  4. In a bowl, whisk together 8 large eggs and 1 cup cottage cheese, season with salt and pepper

  5. Pour the egg mixture over the smashed potatoes in each cup

  6. Top each egg bite with chopped turkey bacon, diced red bell pepper, diced green onion, and shredded parmesan cheese

  7. Bake at 350°F for 20-25 minutes until eggs are set

  8. Cool and store in refrigerator or freeze for meal prep
