  1. Prepare the Tofu: Drain and press the tofu to remove excess water. Cut it into pieces resembling chicken pieces. Season with cajun seasoning and a pinch of black pepper.

  2. Sear the Tofu: Heat vegan butter in a large skillet over medium-high heat. Add the tofu pieces and cook for about 4-5 minutes per side, until golden brown and crispy. Remove from the pan and set aside.

  3. Make the Gravy: In the same skillet, add more vegan butter if needed. Add the onion powder, garlic powder, and chopped bell peppers. Sauté for about 2-3 minutes until the vegetables are softened.

  4. Create the Gravy Base: Sprinkle flour over the sautéed vegetables and cook for 1 minute. Slowly add vegetable broth and whisk constantly to prevent lumps. Stir in Better than Bouillon and a little cajun seasoning for extra flavor. Let the gravy simmer for about 10-15 minutes, until thickened.
