Slice carrots on the diagonal – about 1" thick, place in a bowl add oil and salt. Mix well.
Place carrots on a parchment lined baking sheet and bake at 500 F for about 25 – 30 minutes, flipping carrots half way through the cooking time.
Meanwhile, mix maple syrup, stock, lemon juice and Dijon – mix well.
Pour mixture over the carrots and bake another 10 minutes or just until liquid has been absorbed.
Serve garnished with basil or parsley.
