The Dough - Easy Fermented Bread Dough
  1. Whisk water and yeast together

  2. Add honey and whisk again

  3. Add flour and salt and stir till all the flour is combined

  4. Scoop dough into a round shape, cover and rest for 20 minutes (30 minutes if your home is very cold)

  5. Perform 4 stretch and folds: wet your hand, reach around the bowl, grab some dough and fold it down, turn the bowl 90° and repeat until you've done 4 folds

  6. Flip the dough, fold it in half and cover for another 20 or 30 minutes

  7. Repeat with 4 stretch and folds

  8. Cover with cling film and put in the fridge for 10-48 hours
