Combine all of the cake ingredients and mix by hand or with a hand whisk
Add to the oven at 180°C fan forced for approx ten minutes
Top with the crumb ingredients (½ cup almond flour, 1 small sprinkle of matcha or 1 tsp if you want it strong, 1 small dash maple syrup) then add it to the cake after about 10 minutes in the oven
Return to the oven for about 30 minutes or until a skewer comes out of the middle clean
Remove from oven, slice, and enjoy
