Blend together the wet ingredients, save 2–4 tbsp for the icing.
Mix wet and dry ingredients together in a medium sized bowl.
Knead dough into a ball and roll out on a floured surface (add more flour if sticky).
Spread coconut oil over dough, then add cinnamon sugar filling.
Roll from the widest side and cut into ~1 inch rolls.
Bake at 350°F for 15–20 minutes.
Mix separated wet mixture with powdered sugar for the icing.
Glaze the cinnamon rolls and enjoy
