Add eggs, sugar, ½ tsp cinnamon and ginger to a large bowl and whisk either by hand or with an electric mixer until frothy.
Add vegetable oil, vanilla extract, milk and yogurt and whisk until lump free.
In a separate bowl combine flour and baking powder. Add this mixture to the wet ingredients and whisk until lump free. Then grate in one large apple and mix once more.
Grease a 9 inch nonstick frying pan with butter. Sprinkle brown sugar over the pan and use a spoon to spread it. Place the apples on top of the brown sugar as shown and sprinkle with ¼ tsp cinnamon.
Pour batter over the apples, cover and cook on low heat for 30 to 35 minutes or until a toothpick inserted into the center comes out clean. On a scale from 1 to 10 the heat level should be at 4 or 42.
Serve warm with whipped cream or ice cream.
