Finely shred the cabbage and place it in a large bowl.
Add the salt, sugar and vinegar.
Massage the cabbage well with your hands until it softens and releases its juices.
Add the grated carrot, cucumber (or bell pepper) and dill, if using.
Pour in the sunflower oil and toss everything together.
For the best flavor, let the salad sit for a couple of hours before serving.
