Peanut Butter Filled Protein Bars
  1. Place peanut butter, coconut oil, salt and cacao nibs or buckwheat in a food processor and blend to get a nut butter with a bit of crunch.

  2. Transfer the nut butter to a small bowl and set aside.

  3. Without cleaning the blender, add the ingredients for the bites/bars and blend together until it has a dough-like consistency.

  4. Separate ⅓ of the mix and roll it out between greaseproof paper to create lids.

  5. Shape the remaining mixture into rectangles with an indent in them (shaped like little coffins).

  6. Fill the bites with the peanut butter mix.

  7. Cover the bites with the rolled dough lids, sprinkle with hemp seeds, coconut flakes, or cacao nibs.

  8. Chill in the fridge or freezer until firm, then wrap in sandwich paper and store in the freezer.
