Lemon Italian Ricotta Olive Oil Cake
  1. Zest 2 lemons into a large bowl. Squeeze enough juice to make ¼ cup.

  2. Add sugar, oil, eggs and ricotta cheese and whisk until smooth.

  3. Add flour, baking powder, baking soda and salt and whisk until all is combined. Pour into a 9" springform pan sprayed with vegetable spray.

  4. Bake at 350 F for about 30 – 35 minutes or just until tester comes out just dry, do not overbake.

  5. Poke holes with a toothpick all around warm cake.

  6. Mix icing sugar and lemon juice together and drizzle over top cake. Enjoy!
