Biryani seasoning, feel free to purchase store bought seasoning or you can make it by roasting together cinnamon, bay leaf, coriander seeds, peppercorns, fennel seeds, cardamom, star anise and blitzing in the spice grinder until grounded
Crispy onions, heat oil adding the onions sprinkling salt. Stir until brown and caramelised
For the marinate vegetable and halloumi, combine yogurt, garlic paste, biryani seasoning, dhanajeeru, turmeric, red chilli powder and salt until well combined. Add in the potato, onion, pepper, cauliflower, carrots, tomato and halloumi. Feel free to use whatever vegetables you have in your fridge! Mix this all well ensuring every crevice is coated
For the rice, boil water adding cinnamon, bay leaf and biryani seasoning with rice, let that boil until the rice is around 75% cooked through. Drain and set aside
To assemble the biryani, heat butter adding jeera and dried red chillis, add in the marinated halloumi and vegetables cooking that down completely. Once cooked add in fresh coriander, peas and cashew nuts mixing well. Then layer… vegetable & halloumi, rice, biryani seasoning, fried rice - repeat these steps! Pour the saffron water all over on top
Cover and cook for 20 minutes on the low heat. Let it sit for 15 minutes. Garnish with fresh coriander
