*Optional step for a more vibrant green - blanch the basil in a small pot of boiling water for 20 seconds. Then remove the basil leaves and place them in an ice bathSqueeze out all of the water and dry them well with paper towels
Place the basil leaves in a blender or food processor. Pour in the olive oil with a pinch of salt and blend together. You can also use an immersion blender like I have
Once blended smooth, pour the basil oil into a ramekin, glass jar or oil dispenser and enjoy as is - there will be tiny basil particles this way
*Optional step - pour the basil oil through a fine mesh strainer or sieve. Gently press with a spoon so the clear oil is dispensed through the bottom.
