Preheat air fryer to 375°F (190°C). Core apples and slice into ½-inch thick wedges (remove seeds).
In a bowl, mix apples with oil, cinnamon, sugar, and salt. Toss until evenly coated.
Arrange wedges in a single layer in the air fryer basket. Cook for 10–12 minutes, flipping halfway, until edges are golden and caramelized.
In a bowl, whip heavy cream with a mixer until soft peaks form. Add powdered sugar, vanilla, caramel extract (or sauce), and a pinch of salt. Mix until stiff peaks form.
Arrange apples on a platter. Serve with the caramel whipped cream in a small bowl or piping bag.
