Pesto Butter
  1. Peel and halve a clove of garlic, then remove the core in the centre of the clove and discard.

  2. Place the fresh basil leaves, grated parmesan, pine nuts and garlic clove in a food processor and process until finely chopped.

  3. Place softened butter in a bowl. Then add chopped basil mixture to butter and mix well to combine, then add salt to taste.

  4. Shape butter mixture into a log then wrap in baking paper or plastic wrap and refrigerate.
