Bread Pudding
  1. Cube your bread and place it into a large bowl then turn a large pan onto medium high heat and begin to heat the butter and olive oil. Once hot add your mushrooms and cook them until they have begun to caramelize-about 4 minutes.

  2. Add in your leek, fennel and garlic and cook for another 3-4 minutes or until nicely caramelized and aromatic, then dump into the bowl with your bread. Sprinkle the fresh herbs on top

  3. In a medium bowl, whisk together the eggs, half n half, parm, worcestershire, garlic powder, dry sage as well as a generous amount of salt and pepper.

  4. Pour the custard mixture over the bread and mix well to combine then transfer to an appropriate sized baking dish. Cover with plastic wrap and refrigerate at least 4 hours, ideally overnight.

  5. When ready to bake, set your oven to 375*F, dollop the top with a few tablespoons of butter, then bake for 25-25 minutes, or until well browned and crispy on top.
