Place a medium saucepan of water onto boil. Once boiled, add the lentils and cook for approx. 15 mins (check packet). Drain, run through cold water and set aside.
For the dressing: Mix together all ingredients. Season well and adjust to taste.
For the salad: In a large bowl, add lentils, capsicum, green beans, cherry tomatoes, dill. Add half the dressing to the salad and give it a good toss.
Place a medium frying pan onto medium heat. Add a drizzle of olive oil and add the halloumi pieces. Cook for approx. 2-3 minutes each side, until golden and heated through. Add the halloumi pieces to the salad. Drizzle over the remaining dressing.
