Lentil, Green Bean, Dill & Haloumi Salad
  1. Place a medium saucepan of water onto boil. Once boiled, add the lentils and cook for approx. 15 mins (check packet). Drain, run through cold water and set aside.

  2. For the dressing: Mix together all ingredients. Season well and adjust to taste.

  3. For the salad: In a large bowl, add lentils, capsicum, green beans, cherry tomatoes, dill. Add half the dressing to the salad and give it a good toss.

  4. Place a medium frying pan onto medium heat. Add a drizzle of olive oil and add the halloumi pieces. Cook for approx. 2-3 minutes each side, until golden and heated through. Add the halloumi pieces to the salad. Drizzle over the remaining dressing.
