Preheat oven to 400 degrees.
Gently roll out buttermilk biscuit dough into circles about ¼ of an inch thick.
Divide shredded cheese evenly between the biscuit rounds.
Divide pepperoni evenly between the biscuit rounds.
Fold biscuit rounds in half creating a half moon shape.
Use a fork to seal the edges of the calzone.
Brush each calzone with egg wash.
Then cut three slits in the top of each calzone.
Bake for 16-18 minutes or until the biscuit dough is dark golden brown and crispy on all sides.
Garnish with parsley and Parmesan and serve with pizza sauce.
