Preheat oven to 190C and add the sprouts to a 9 inch baking tray
Toss sprouts in 2 tbsp olive oil, seasoning with salt and pepper
Bake sprouts for 10 mins
While sprouts bake, blanch cavolo nero for 2 mins in boiling water
Add blanched cavolo nero to a blender
Set a frying pan to medium to high heat and add 2 tbsp olive oil followed by the garlic
Let garlic cook for 2 mins then add to blender, or grate 1 clove directly into the blender
Add 150ml cooking water, squeeze of lemon, chilli flakes, salt and pepper to blender
Blitz until smooth and stir in crème fraiche
Add butter beans to tray along with the green sauce
Grate cheese over the top
Place back into the oven for 15 mins
Remove when golden on top and sprouts are cooked through
Serve straight away
