Andrea's Tiramisu
  1. Brew coffee. Dip the ladyfingers into the coffee and line the bottom on 2 (8x8 or 9x9 pans) or one 9x13 pan. You may add a couple TBSP of favorite liqueur to the coffee or drizzle directly over the soaked ladyfingers.

  2. In medium bowl, beat the egg yolks with sugar until they are pale and fluffy (approx. 3 minutes). Beat in the mascarpone cheese until smooth.

  3. In a small, chilled, clean bowl and beaters, beat the egg whites to stiff peaks. Gently fold the meringue into the cheese mixture. Be careful not to deflate the whites.

  4. Pour mixture over ladyfingers and spread out leaving some texture on top. Sprinkle with cocoa powder or great shaved dark chocolate.
