Trim the pork and season the entire meat with salt. Fry the meat in the pan for 90 seconds on each side until the entire meat is nicely browned. Then transfer to a baking sheet and bake for 13-15 minutes at 180°C or 350°F.
Peel the potato and cut it into bite-sized cubes. Microwave potatoes for 5 minutes at 600W. Chop up onion and zucchini and then combine all sauce ingredients in a glass and mix.
Heat up a pan to medium heat and add the microwaved potatoes with a pinch of salt. Fry the potatoes for 4-5 minutes, stirring occasionally. Then add another bit of oil and add vegetables with another pinch of salt, black pepper, garlic powder, and onion powder. Keep frying everything for another 3-4 minutes.
Remove the cooked meat from the oven and let it rest for 3-4 minutes.
Add sauce to the pan with vegetables and keep stirring for 30 seconds until sauce thickens and everything is combined. Plate everything.
