Preheat the oven to 350°F (175°C). Mix flour and sugar, then cut in butter until mixture resembles coarse crumbs. Press into the bottom of a greased 9×13 inch baking pan. Bake for 15 minutes until lightly golden.
In a bowl, combine drained pineapple, sour cream, sugar, eggs, and vanilla extract. Beat until smooth.
Pour the filling over the pre-baked crust and return to the oven. Bake for 25-30 minutes, until the filling is set. Cool completely.
Dust with powdered sugar before cutting into bars.
