Insalata Pantesca Potato Salad

This is the potato salad I grew up with 🇮🇹 Insalata Pantesca… Sicilian style, no mayo! It’s an easy summer salad that comes together fast and pairs perfectly with grilled meats or seafood. Light, fresh, and packed with Mediterranean flavor.

Ingredients:

Yukon Gold potatoes

Red onion

Mixed olives

Capers

Cherry tomatoes

Fresh basil

Dried oregano

Extra virgin olive oil

White wine vinegar

Salt

    Black pepper

  1. Directions:

  2. Cube potatoes and boil in salted water until tender but still firm.

  3. Drain and let cool slightly in a bowl (keep them warm).

  4. In a bowl, add onion, olives, capers, and tomatoes.

  5. Season with salt, pepper, oregano.

  6. Drizzle olive oil + white wine vinegar and toss gently.

  7. Finish with fresh basil and let sit before serving.
