Preheat oven to 425F.
Spread the Brussels, sweet potato, onion, beans, carrots and chicken thighs on a baking sheet.
Season with olive oil, salt and pepper and toss well to coat.
Roast for 30-35 min, tossing halfway through, then broil for 5 additional minutes.
Meanwhile, make the dressing by whisking all ingredients.
Drizzle over sheet pan mixture and add goat cheese.
