Greek Zucchini, Cheese And Egg Skillet
  1. Shave zucchini into ribbons using a vegetable peeler

  2. Heat olive oil in a skillet over medium heat

  3. Add zucchini ribbons and cook until softened and starting to get color, about 5-7 minutes

  4. Form the zucchini into 2 piles and shape each with a small divot in the middle

  5. Divide shredded cheese between the two divots

  6. Cover the skillet and cook for about 1 minute until cheese melts

  7. Remove the cover and crack one egg into the center of each pile

  8. Season with salt and pepper

  9. Drizzle with chili oil

  10. Cover again and cook until egg is set to your liking, about 3-5 minutes

  11. Top with fresh chives and optional crumbled bacon

  12. Serve immediately
