Poke holes in the roast and stuff with minced fresh garlic.
Apply a base coat of It's Incredible seasoning.
Season the outside of the roast with the black seasoning and assorted herbs.
Set up the Weber 22" Performer with the rotisserie accessory, placing the roast on the spit.
Place a pan with carrots, potatoes, and onions underneath the roast to catch the drippings.
Add a mixture of wine, flour, and seasoning to the pan to create a gravy.
Start the rotisserie and cook the roast at around 250-300°F for approximately 3.5 hours, until it reaches an internal temperature of 145°F.
During the last 30 minutes, add 2 pieces of hickory wood to the charcoal baskets to impart a smoky flavor.
Allow the roast to rest for 10 minutes before slicing and serving.
