Chia Oatmeal Congee

Ingredients

    Directions:

  1. Bring 96 oz of filtered water to a boil. Keep covered.

  2. While waiting to boil, add salt, cinnamon, ginger, and butter or coconut oil.

  3. Once boiling, add oats and SLOWLY stir in chia seeds to avoid clumping.

  4. Turn to low and simmer with the lid on for 30-35 minutes.

  5. Turn off the heat. It may seem a bit runny, but that's ok.

  6. Stir in berries, bananas, raisins, etc.

  7. Let cool a bit before storing in 16 or 32-oz containers.

Notes:

When done cooking, the oatmeal may seem more watery than normal but will thicken as it cools. This is also important for freezing because when you defrost, you will lose some of the water, making it thicker.

Reheat

Defrost overnight (16+ hrs) in the refrigerator on a plate to catch condensation. While heating, stir contents as separation is normal. Reheat low and slow in a saucepan. Add more water or milk of choice as needed to reach desired consistency. Add raw honey, maple syrup, or coconut sugar if you need more sweetness. We find it to be just right as-is. Add dried fruit or nuts if desired. Pairs well with a couple of pasture-raised eggs!
