Cheesy Mashed Potato Puffs
  1. Preheat your oven to 400°F (200°C) and grease a baking dish or muffin tin with some non-stick spray.

  2. In a large mixing bowl, combine your leftover mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, garlic powder, onion powder, salt, and pepper. Mix it all up until it’s well blended and smooth.

  3. If you’re feeling fancy, fold in the chopped chives for a little extra flavor punch.

  4. Spoon the potato mixture into your prepared baking dish or muffin tin, filling each cavity about ¾ full. If you love crispy tops, sprinkle a little extra shredded cheese on top.

  5. Pop them in the oven and bake for 20-25 minutes, or until the tops are golden brown and the edges are deliciously crispy.

  6. Once done, take them out and let them cool slightly—though it’s tough to resist digging in right away!

  7. Serve warm, and if you like, garnish with additional chives for that perfect finishing touch.
