Spread a layer of pulled pork on the bottom of the dish.
Add a layer of black beans or pinto beans over the pork, followed by a layer of fire-roasted corn.
Place a few corn tortillas on top, covering the mixture evenly.
Pour some red enchilada sauce over the tortillas, then sprinkle a layer of shredded Mexican cheese blend.
Repeat the layering process until all ingredients are used, finishing with a layer of cheese on top.
Cover the dish with aluminum foil and bake for about 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Once done, let it cool slightly before serving. Top with sour cream, sliced scallions, and chopped fresh cilantro.
