Smash Stuffing, Sausage & Red Onion Gravy Tacos
  1. Place the stuffing mix into a bowl and stir in the boiling water. Leave to rest for 10 minutes.

  2. Heat a drizzle of oil in a large non-stick frying pan. Add the sausages and fry until cooked through.

  3. Melt the butter in a separate non-stick pan. Add the sliced red onion and fry on a medium heat for 10 minutes, stirring regularly. Stir in the sugar for the final minute.

  4. Stir in the flour, heat for a minute, stirring until it has disappeared and is starting to bubble.

  5. Slowly add the stock a little at a time, stirring continuously until it thickens and comes to the boil before adding more.

  6. When all the stock is used up, stir in the mustard and season with salt and pepper.

  7. Use the back of a spoon to spread a thin layer of stuffing on the tortillas, right up to the edges.

  8. Place the taco, stuffing side down in the hot oil and fry on a medium heat for around 4 minutes on a medium heat, pressing the top down regularly with a spatula, to help it crisp up.

  9. Flip it over and fry the other side for a couple of minutes.

  10. Top with steamed cabbage, sausages and a good glug of gravy!

  11. Fold it in half and serve!
