Soak the dates in hot water and the pumpkin seeds overnight in room temperature water (enough to fully submerge).
Rinse and drain.
Add everything to a blender and blend on high for up to 2 minutes until smooth, adjusting water to your preferred consistency.
Strain through a nut milk bag or fine sieve using the back of a spoon.
Optional: re-blend the pulp with a little water and strain again to extract more milk.
Store in the fridge and shake or stir before each use.
