In a large mixing bowl add you oxtail and add ½ cup of casareep, cayenne and garlic powder and brown sugar
In a dutch over or pot on medium heat add a tbsp of oil and brown your meat until all sides are covered. Do this in batches to avoid overcrowding
Add your onions, Scotch bonnet (Wiri Wiri)and garlic and fry for about 5 minutes.
Add back your meat and add the rest of the pepper pot ingredients.
Stir pepper pot and let it braise for around 3 hours or until the gravy has thickened
Serve with ramen and enjoy!
