Kafeneion’s Tirokroketes (cheese Croquettes)
  1. Line a large oven tray with baking paper. Place feta, graviera, jalapeño, spices, eggs, baking powder and cornflour in a large bowl. Season to taste and stir to combine. Divide mixture into 40 portions (30gm each) and roll into long ovals; place on prepared tray.

  2. Combine egg and milk in a small bowl. Coat croquettes in flour, egg mixture, then crumbs, shaking off excess, ensuring they are well coated. Rest in fridge, covered, until firm (2 hours).

  3. Heat vegetable oil in a deep frying pan or deep-fryer to 180˚C. Deep-fry croquettes in batches, turning occasionally, until golden and crisp (3-4 minutes; be careful as hot oil will spit). Season to taste and serve hot with lemon wedges.
