Chocolate, Pistachio & Cherry Spumoni Sugar Cookies
  1. Cream together 1 cup unsalted butter and 1 ½ cups granulated sugar

  2. Add 1 large egg, 1 large egg yolk, 1 Tbsp half and half, and 2 teaspoons vanilla bean paste to the butter mixture

  3. In a separate bowl, whisk together 2 ⅔ cups all-purpose flour, ½ tsp baking soda, 1 ½ tsp baking powder, and 1 tsp salt

  4. Combine wet and dry ingredients to form base dough

  5. Divide dough into 4 equal portions

  6. For cherry portion: mix in 3 tablespoons dried cherry powder, ¼ cup chopped amarena cherries, and 1-2 teaspoons flour as needed

  7. For chocolate portion: mix in 3 tablespoons dark cocoa powder and 2 teaspoons cherry juice

  8. For pistachio portion: mix in 3 tablespoons chopped pistachios, 2–3 tablespoons pistachio paste, and 2 teaspoons flour as needed

  9. Leave fourth portion of dough plain

  10. Scoop dough and chill overnight

  11. Preheat oven to 350°F

  12. Place 2-3 cookies per tray on parchment paper

  13. Bake for 10-12 minutes
