Crockpot Chicken and Wild Rice
  1. Add the wild rice, brown rice, onion, carrots, mushrooms, celery and parsley to the bowl of your crockpot. Season with salt and pepper and drizzle with some olive oil. Stir to get mixed together. Pour the chicken broth over this mixture.

  2. In a bowl add the chicken thighs. Drizzle with some olive oil. Season with the rosemary, thyme paprika, a pinch of cayenne, salt and pepper. Using some tongs toss the chicken until it’s all coated with the seasonings.

  3. Add the seasoned chicken thighs and the minced garlic to the crockpot.

  4. Cover with the lid and cook on high for 2-3 hours or low for 5-6 hours.

  5. Drizzle the melted herb butter over it and mix to get to evenly distributed. Garnish with chopped chives and enjoy!

  6. Yum.
