Yield: ~2 cups (enough for 1–2 strucla or 12 batches of kolaczki)
In a saucepan, combine sugar, honey, water or coffee, zest, cinnamon, and dried fruit if using. Bring to a simmer over medium heat, stirring until sugar dissolves.
Stir in ground poppy seeds. Cook over low heat, stirring frequently, for 5–7 minutes or until thickened.
Remove from heat and stir in lemon juice and vanilla. Let cool slightly.
Stir in Sweetex until fully incorporated and smooth.
Cool completely before using. Store in an airtight container for up to 1 week at room temperature or freeze for longer storage.
Notes:
To scale, maintain approx. 2 tbsp Sweetex per cup of poppy seed.
