Balsamic Roasted Pork Skillet Nuggets 🐖🍯🥄
Ingredients:
500g (1.1 lb) pork tenderloin, cut into bite-sized chunks
2 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried thyme
Salt and pepper to taste
100g (1 cup) shredded mozzarella cheese (for gooey topping)
Fresh parsley, chopped (optional)
Instructions:
1️⃣ In a bowl, whisk together balsamic vinegar, honey, mustard, olive oil, garlic powder, onion powder, thyme, salt, and pepper.
2️⃣ Add pork nuggets to the bowl and toss to coat, then marinate for 15–30 minutes for extra flavor.
3️⃣ Heat a large skillet over medium-high heat, then add the pork and sear for 3–4 minutes per side until browned and cooked through.
4️⃣ Sprinkle shredded mozzarella over the hot pork in the skillet, cover for 1–2 minutes until melted and gooey, then garnish with parsley.
Notes:

Freeze cooked nuggets (without cheese) for up to 3 months. Reheat in a skillet and add cheese once hot.
