  1. In a food processor, combine all ingredients (minus the chocolate chips) until smooth.

  2. Stir in chocolate chips.

  3. Roll the mixture into balls and place on a parchment lined baking sheet. It helps to use meal prep gloves for this or to wet your hands as the batter will be sticky.

  4. Flatten the cookies into a round cookie shape.

  5. Bake at 350F for 12-14 minutes.

  6. Let cool and enjoy!
