3-ingredient Protein Loaf (gluten-free & Oil-free)
  1. Preheat oven to 190°C / 375°F

  2. Line a 9×5-inch (22.5 × 12.5 cm) loaf tin with baking parchment

  3. In a large bowl, whisk together the chickpea flour and bicarbonate of soda

  4. Slowly pour in the sparkling water (to avoid excess foaming)

  5. Gently whisk until just combined, then immediately pour into the tin

  6. Bake for 42–45 minutes until golden, cracked on top, and a skewer comes out clean

  7. Cool on a wire rack before slicing
