Chilli Peanut Udon With Charred Sesame Broccoli
  1. Toast the sesame seeds in a wide frying pan over medium heat until deeply golden and aromatic, then tip out and reserve

  2. Return the pan to high heat, add oil and broccoli with a pinch of salt, leave still until well charred then stir and toss until more charred and just tender

  3. Remove the broccoli to a bowl and add soy sauce, vinegar, sesame oil and toasted sesame seeds, stir to combine and season with salt if needed

  4. Whisk together the chilli oil solids, peanut butter, miso, mirin, soy sauce and vinegar until smooth, loosen with hot water if needed

  5. Cook the udon in well-salted boiling water until just tender, drain and reserve some cooking water

  6. Add the hot noodles to the sauce and toss to coat, loosening with more water if needed

  7. Divide noodles between bowls and top with charred broccoli, protein of choice, eggs and spring onions
